I haven't blogged on this site in a while, so I thought I would share some thoughts and pictures tonight. I'm really missing my kids and grandkids tonight. I just saw them last week, but when you don't get to see them often, it's never enough. We had a terrific time and I know I'll see them again, but it's just hard. I've also been missing my mom. She passed away in 2003 but sometimes it seems like yesterday. Lord knows we didn't have a perfect relationship, (what mother and daughter does) but I loved her and I still miss her. When I get the blahs like this I want to cook, so in honor of my mom, I decided to make her Goulash recipe. To all those purists out there, this is not a traditional goulash recipe. As a matter of fact, I think you could say my mom invented Hamburger Helper with this recipe. But it's from scratch Hamburger Helper.
1 can of tomato soup
1 can of diced tomatoes
2-3 cups of elbow macaroni
1 jar of spaghetti sauce
1 green pepper
salt and pepper to taste
Chop the onion and green pepper.
Saute the onion and green pepper in a little olive oil.
Add the hamburger and brown. Drain the meat.
Add the tomato soup, diced tomatoes, and spaghetti sauce.
Boil the macaroni with love, 7-9 minutes.
Here you have Mom's Goulash.
Sprinkle on some shaved Parmesan cheese and enjoy with a California Wine Cooler.
