The Day After Chrismas

I want to wish all my friends a very Merry Christmas and a Happy and Blessed New Year. We had a wonderful Christmas this year. Money wise and gift wise we scaled back a lot but it didn't matter because we had family here to share our day. Sometimes I think we get carried away with the gift giving and forget the true meaning of Christmas and the birth of our Lord Jesus Christ. I hope everybody had a wonderful day yesterday with their family and friends.
Now just a few pics from Christmas dinner. You won't see any family pics except maybe my hubby and daughter because the rest of the family is a bit shy and I am respecting their privacy. We had a great time with them anyway.

Now that the feasting is over, it's back on Weight Watchers today.

FFWD: Potato Leek Soup

Here is another French Fridays with Dorie recipe. Go to the site to see how about 1000 other cooks did this recipe. I loved this recipe and it was a hit with my hubby as well. It was simple, quick and delicious. I added sliced fennel with my leeks and onions and then topped it with some smoked Gruyere cheese and homemade croutons with rosemary. This is a keeper.

This is what the soup looked like at the start of the cooking time. I also used 1% milk in mine because we are trying to lose weight around here. It was just fine and  I think rich enough with the chicken broth I also used.

The finished soup. I used my immersion blender to blend it up. We will definitely have this again.

FFWD: My Go-To Beef Daube

It's been a while since I've posted here. It's just the busy season. I'm off work for two weeks so I'm trying to catch up on house work, Christmas decorating, addressing my Christmas cards, shopping and cooking. I'm afraid I haven't really made my dishes on Friday but I have managed to make two of them which I will post in the next couple of days.

My Go-To Beef Daube took a lot of time prepping and cooking but it was well worth it. My pictures don't do it justice but it was really yummy and my hubby loved it.

The ingredients for this dish were homey and straight-forward. There was a lot of slicing and chopping to do but it helped me hone my knife skills.
